Lipid composition of the liver oil of the ray, Himantura bleekeri ArchiMer

If rays are traditionally fished for their caudal fins, the rest of the body is wasted, except part of the skin that can be transformed into leather. Liver oil of the ray, Himantura bleekeri, was characterized in terms of lipid class composition and fatty acid profile. Liver oil content was high and represented 54% of the liver weight (w/w). Neutral lipids were predominant (92%), major components being triacylglycerols (63%). Other neutral lipids identified were hydrocarbons, sterol esters, mono- and di-acylglycerols, free fatty acids, sterols and glyceryl ethers. Lipid content and fatty acid composition of a marine-derived Trichoderma longibrachiatum strain cultured by agar surface and submerged fermentations ArchiMer

A marine-related Trichoderma longibrachiatum strain isolated from mussels in a farming shellfish area was investigated for total lipid (TL) production, total lipid fatty acids (TLFA), and phospholipid fatty acids (PLFA). Fungal biomass was produced from two different marine-like culture ways, on agar surface and submerged fermentations (ASF and SmF, respectively), allowing useful comparisons. Odor Modification in Salmon Hydrolysates Using the Maillard Reaction ArchiMer

The aim of this work was to study the effect of adding sugar during proteolysis to promote the Maillard reaction and mask the initial fish odor and off-flavors generated. An experimental design, based on the Doehlert plan, was used to study the influence of hydrolysis conditions (time, temperature, sugar, and antioxidant addition) on the odor characteristics of hydrolysates, soluble protein levels, and amino acid content. Results showed that the lowest level of sugar (10g of D-xylose added to 1kg of by-products) was enough to develop a grilled odor in hydrolysates. In the hydrolysis conditions used, i.e. enzyme inactivation at 95°C for 30min, hydrolysis temperature had no effect on grilled odor production but significantly affected the soluble protein...

Operation and cleaning of ceramic membranes for the filtration of fish press liquor ArchiMer

This paper assesses the performance of three ceramic membranes of average pore size 50 nm, 200 nm and 1.4 tan in the treatment of the press liquor resulting from a compaction operation of sardine by-products. To this end, 2 L of pre-filtered press liquor with an average protein content of 44 g/L were filtered during 3 h through the three membranes assayed. Unexpectedly, the membrane of larger pore size, presented the lowest values for the flux of permeate at steady state at 20 L/(m(2) h), while its average protein rejection (77%) was similar to that observed in the membrane of 200 nm. Optimisation of liquor yield during the hydraulic pressing of sardine (Sardina pilchardus) discards ArchiMer

Fresh sardine (employed as discard model species) was pressed with a hydraulic press in order to obtain a partially dewatered cake (whose volume represents between 55% and 60% of the initial Volume of raw material) and a 3-phase press liquor comprising an aqueous fraction, an oil fraction and a variable amount of suspended solids. Optimization of common cuttlefish (Sepia officinalis) protein hydrolysate using Pepsin by Response Surface Methodology ArchiMer

Protein hydrolysate was prepared from common cuttlefish Sepia officinalis by Pepsin. Hydrolysis conditions (time, temperature, and enzyme activity) were optimized by response surface methodology (RSM) using a factorial design. The regression coefficient was close to 0.999, observed during both experimental and validation runs, and indicated the validity of prediction model. An enzyme activity to substrate ratio (X1), 0.04 AU/g protein; time (X2), 85 minutes; and temperature (X3), 45 °C were found to be the optimum conditions for a higher degree of hydrolysis (21%) and nitrogen recovery (90%) using Pepsin. Processing fish press waters using metallic and ceramic filtration ArchiMer

BACKGROUND The press juices resulting from a compacting operation on fish by-products were subjected to a depuration treatment in order to reduce the high COD (120 g O2 L–1). The process included an initial de-particulation step by means of two metallic filter cartridges of 465 µm and 250 µm, followed by concentration with a 200 nm ultrafiltration ceramic membrane. The polishing efficiency of each unit was assessed in terms of COD and protein removal. RESULTS Dead-end metallic filtration of the press waters reduced their suspended matter content by 28%, but achieved only 5.6% decrease in chemical oxygen demand (COD), which suggested further processing by membrane ultrafiltration. Production et caractérisation de fractions protéiques à partir des coproduits de la sole tropicale (Cynoglossus senegalensis) ArchiMer

The by-products (viscera, heads, backbone and skins) of tongue sole coming from a Senegal frozen fisherie plant, were hydrolized with the Protamex® enzyme.Degrees of hydrolysis of 30 and 19% were obtained respectively with 40°C and 50°C.The results also showed that the proteins contained in these by-products are completely solubilized by the action of this protease at the end of 180 minutes of hydrolysis. The biochemical characterization showed that these hydrolysates are rich in proteins (61%) and minerals (10%). However, the hydrolysates contain peptides of lower molecular sizes 1760Da.Lastly, these hydrolysates have high nutritional value in order to set up table fowls because they have in big quantity 9 essential amino acids for the poultry feed.

Proteolysis of shrimp by-products (Peaneus monodon) from Madagascar ArchiMer

To generate and recover elements from shrimp heads, proteolysis was performed with commercial acidic or alkaline proteases for 22 h. The resulting phases were characterized for protein and lipid content and amino acid composition while the molecular profiles of soluble peptides were established. Whatever the protease used, more than the half of the initial dry matter was found into aqueous phase including most of the proteins while lipids were found to remain insoluble. Hydrolysates were mainly constituted by small peptides (480% below 1000 Da) with up to 14–15 amino acids identified. La présence de substances immunologiquement apparentées aux O/CCK de vertébrés est détectée chez les crustacés décapodes (Favrel,1988; Turrigiano G.G,1989). Un protocole de purification est même établi pour Palaemon serratus et Nephrops norvegicus (Favrel,1988). Dans un premier temps, nous allons nous attacher à la purification des G/CCK immunologiquement apparentées aux hormones peptidiques de vertébrés (O/CCK"like") chez les deux espèces précitées. Dans un deuxième temps, à l'aide des fractions purifiées, le rôle biologique des G/CCK"Iike" et particulièrement leur action sur la synthèse protéique vont être étudiés.

Quality differences of gilthead sea bream from distinct production systems in Southern Europe: Intensive, integrated, semi-intensive or extensive systems ArchiMer

The quality of gilthead sea bream from distinct production systems and geographical locations in Southern Europe was evaluated to differentiate aquaculture products from extensive, integrated and semi-intensive systems from the ones produced intensively. This work analysed the external appearance of fish, yields after filleting as well as nutritional, sensory and histological characteristics of the muscle. The results showed that the yellow-golden line between eyes and the shiny red spot on the gill cover can be important and easy criteria to discriminate aquaculture products. Recovery of valuable soluble compounds from washing waters generated during small fatty pelagic surimi processing by membrane processes ArchiMer

While focus in oil-producing microalgae is normally on nutrient deficiency, we addressed the seasonal variations of lipid content and composition in large-scale cultivation. Lipid content, fatty acid profiles and mono- di- and triglycerides (MAGs, DAGs, and TAGs) were analyzed during May 2007-May 2009 in Nannochloropsis oculata grown outdoors in closed vertical flat panels photobioreactors. Seasonal variation of physical, chemical and sensory characteristics of sea bream (Sparus aurata) reared under intensive conditions in Southern Europe ArchiMer

This study describes the variability of important quality traits in gilthead sea bream produced under intensive conditions in Southern Europe and purchased in a French market (Nantes). Chemical, sensory and histological characteristics were performed on 18 samples delivered over a year. All fish presented far lower dioxin and DL-PCBs or heavy metals concentrations than the maximum limit level set by EC Regulation, being totally safe for human consumption. Fat content and nutritional values reflected by n-3 and n-6 polyunsaturated fatty acids (PUFA) levels were parameters with high variability according to the season or the fish farm. Sensory and aromatic characteristics of tongue sole by-products hydrolysates (Cynoglossus senegalensis) ArchiMer

Tongue sole by-products coming from fish-filleting plant were hydrolyzed by Protamex® protease. To identify the future application of hydrolysates, a sensory analysis was carried out.The sensory profile was performed with a jury of 14 specialized judges.11 profiles were found by this panel of tasting. In addition, the aromatic characterization revealed that 57 molecules are responsible for these odours described in sensory analysis.The description of these aromatic compounds opens potential way of valorization of these hydrolysates in human and animal consumption.
